Picture this:

Everyday around lunch hour, under the broiling Indian sun or sloshing through torrential monsoon rains, thousands of men clad in white tunics and their signature white caps trot through the crowded streets of Bombay, balancing huge baskets filled with gleaming metal canisters on their heads.

As these men dart pass, people turn, captivated by the wonderful aroma that suddenly fills the air.  And it’s no wonder, for these men are carrying tiffins the meticulously planned, flavorful meals that a loving wife or family cook has prepared for the breadwinners at the office.  Three small interlocking metal containers, stacked one atop another, keep the food warm and each flavor distinct—a main dish, a side dish, rice or chapatis, with a tiny packet of pickles and chutney tucked into a corner.

The men who carry the tiffins are called Tiffin-wallahs.  And their arrival is eagerly anticipated by discerning palates skeptical about eating out for lunch preferring home-cooked meals instead.
